This article is the result of a three years research carried through industries where the nature of the work process is, essentially, manual. However, the results gotten so far, based on the principles and methods of the "cognitive engineering", show that, behind the apparent simplicity of those manual gestures, there is the complexity of the human cognition which is mobilized to solve problems and keep the continuity of the plant's production. This occurs by means of the elaboration of mental strategies i.e. activation of different cognitive layers of action control. Therefore, the capacities of adaptation to the environment of frequent cognitive interdiction, in the studied industrial plants, are what guarantee the continuity and the flow tendency verified on those operation systems. The present thesis, still at the conclusion stage, based on these results, indicates that those systems might work in a context of integration and flexibility on the account of the cognitive activity underlying the work process.
